Ingredients

  • 4 10-oz cans Rotel Diced Tomatoes & Green Chiles
  • 4 14.5-oz cans chicken broth
  • 1 30-oz can refried beans
  • 1 cup whole kernel corn
  • 4 cups shredded cooked chicken (1.75 lb package of boneless, skinless chicken breasts)
  • Fried corn tortilla strips or chips
  • Shredded Monterey Jack cheese

Preparation

Step 1

Combine tomatoes and broth in large saucepan. Stir in beans and corn. Bring to a boil; reduce heat to low and simmer 5 minutes, stirring frequently.

Add chicken, heat through.

Top with tortilla strips/chips and cheese.
