Ingredients

  • 2 sticks butter, unsalted, softened
  • 1/2 cup sugar
  • 4 eggs beaten
  • 1 tblsp vanilla
  • 2 cups all purpose flour
  • 2 cups white all purpose flour
  • 2 teas baking soda
  • 2 teas salt
  • 2 tblsp falxseed meal
  • 6 bananas very ripe

Preparation

Step 1

Preheat oven to 350.

Using the whisk attachment of a food mixer, cream the butter and sugar on high speed for 2 minutes. Reduce speed and fold in eggs and then vanilla.

In a separate bowl, whisk together flours, baking soda, salt, and flaxseed.

Gradually pour the dry ingredients into the wet ingredients and slowly combine on low speed. Do not overmix.

Mash and fold in bananas.

Pour into loaf pans prepared with vegetable spray.

Bake until just cooked through. The total baking time is approximately 25 to 30 minutes when dealing with small sized loaf pans.
