Ingredients

  • 4 1/2 lbs ripe tomatoes, stem ends and cores removed
  • 1 1/2 C very finely chopped celery
  • 3 medium onions, very finely chopped
  • 2 garlic cloves, minced
  • 1 1/4 C brown sugar, packed
  • 1 C white vinegar
  • 1 T Worcestershire sauce
  • 2 T paprika
  • 2 T mustard powder
  • 2 tsp table salt
  • 1/4 tsp cayenne
  • 1 tsp chili powder
  • 1/2 tsp liquid smoke
  • 2 T HP sauce

Step 1

Cut tomatoes into chunks and place in large pot. Cook, stirring often on medium heat until soft. Press through food mill ro remove seeds and skin. Return puree to pot.

Add remaining ingredients. Stir well. Bring to a boil on medium heat, stirring often. Simmer for about 1 1/2 hours, stirring occasionally, unti thickened. Cool. Smooth in blender. Return puree to pot. Return to a boil. At this point, more paprika may be added for colour or less if tomatoes are deep red. Cayenne pepper may beincreasedfor more of a bite. Pour into hot sterilized half pint jars to within 1/4 inch of top. Place sterilized metal lids on jars and screw metal bands on securely. For added assurance against spoilage, you may choose to process in a boiling water bath for 20 minutes.
