White Scallopini

Ingredients

  • 1 1/2 lbs veal (sliced thin)
  • 1/2 c. flour (salt & pepper)
  • 6 T. butter
  • 2 T. oil
  • 1 large onion (chopped)
  • 1/2 lbs sliced mushrooms
  • 1 clove garlic (minced)
  • 1 c. dry white wine
  • 1/2 - 1 c. chicken broth
  • 1 T. lemon juice
  • 1/2 tsbp. thyme leaves
  • 1 cup sour cream
  • 2 T. flour

Preparation

Step 1

Coat the veal in flour/salt/pepper mixture, then saute in 3 T. butter and oil. Remove when cooked.

Saute onion, mushrooms, garlic in 3 T. butter for 5 minutes.

Combine wine, chicken broth, lemon juice, thyme, then add meat. Simmer for 15 minutes.

Mix together the sour cream and flour. Add to pan with other ingredients until well blended.
