Chicken With Chunky Tomato Sauce

This easy and delicious recipe calls for Greek seasoning. I could not find any at the store, so I researched it online and made my own from spices I already had!

- 1 package prepared mashed potatoes
- 1-2 lbs. chicken thighs or cutlets
- 1-2 Tbsp. Greek seasoning
- 2 Tbsp. olive oil
- 1-2 Zucchini, chopped
- 1 cup diced onion
- 1 tsp. salt
- 1/2 tsp. black pepper
- 1 (14.5 oz.) can fire-roasted tomatoes with garlic, undrained
- 2 Tbsp. cold butter, cut up
- 1 Tbsp. red wine vinegar

Step 1
1. Sprinkle chicken with greek seasoning. Brown on both sides in oiled skillet over med.-high heat. Remove chicken and keep warm.
2.Reduce heat to medium. Add zucchini and onion. Sprinkle with salt and pepper. Cook until begining to soften. Add tomatoes. Bring to a simmer.
3. Add chicken back into sauce and continue to simmer about 10 minutes.
4. Remove from heat. Add in butter and vinegar. Serve over hot mashed potatoes.
