Ingredients

  • CREPES:
  • 1 1/2 1 1/2 1/2 cups flour
  • 1 1 1 Tbs. sugar
  • 1/2 1/2 1/2 tsp. baking powder
  • 1/2 1/2 1/2 tsp. salt
  • 2 2 2 cups milk -or- buttermilk
  • 2 2 2 eggs
  • 2 2 2 Tbs. melted butter
  • 1/2 1/2 1/2 tsp. vanilla
  • ........................................
  • Mix dry ingredients - then add wet ingredients.

Preparation

Step 1

FILLING:


1 cup heavy whipping cream
1 package (8 ounces) cream cheese, softened
2 cups confectioners' sugar
1 teaspoon vanilla extract


In a small mixing bowl, beat the cream until stiff peaks form; set aside. In a large mixing bowl, beat the cream cheese, confectioners' sugar and vanilla until smooth; fold in whipped cream.

STRAWBERRY TOPPING:


1 cup strawberries
2/3 cup water
1/2 small pkg. Strawberry Jello



Mix and simmer 3 minutes. Then mix 1 cup sugar, 3 Tbs. cornstarch & 1/3 cup cold water until smooth. Add to simmered mixture & boil until thick & clear. Add few drops of red food coloring, if desired. Cool. Add 1 or 2 sliced bananas to topping just before serving.

TO ASSEMBLE CREPES:


Spoon 2 rounded tablespoons of filling down the center of each crepe; roll up. Top with strawberry topping. Sprinkle with powered sugar when ready to serve.



Note: I make a day ahead or sometimes just buy the fruit glaze (in produce dept) and add berries to that, but I really love the Strawberry Topping much better. You can make the cream cheese filling a day ahead so all you have to do is assemble after making crepes. In fact, you can make the crepes ahead as well. Just refrigerate everything and serve them in the morning for breakfast. The crepes are delicious chilled.
