Quinoa with Tomatoes, Parmesan & Basil 1 Picture

Ingredients

  • 1 Cup of Quinoa
  • 1 tbsp olive oil
  • 1 onion, finely chopped
  • 3 cloves of garlic, minced (I used more)
  • freshly ground salt and pepper
  • 2 cups of Vegetable stock
  • 4 plum tomatoes, seeded and chopped
  • 1/4 cup freshly grated Parmesan cheese
  • 1/4 cup thinly sliced fresh basil
  • Shaved Parm cheese for garnish

Preparation

Step 1

1. Rinse quinoa in a sieve under running water, stirring to make sure it is well rinsed. Drain well and set aside.

2. Heat oil in large saucepan with a tight lid over med. heat. Add onion and saute for about 3 minutes or until onion is soft. Add garlic and a pinch of salt and pepper. Saute for another minute. Add Veg. stock and bring to a boil, scraping uo any bits stuck to pan.

3. Stir in quinoa and return to a boil, stirring occasionally. Reduce heat to low and simmer for 15 mins or until quinoa is tender and liquid is absorbed. Remove from heat and sprinkle tomatoes on top. Cover and let stand for 5 mins.

4. Gently stir in tomatoes, the grated pram cheese and half of basil, fluffing (love this word) with a fork as you stir. Serve with shaved pram cheese and remaining basil.

D'lish.....enjoy alone, with a side of top sirloin medallions (as we did) or with some baked fish!
