Ingredients
- 1 tablespoon vegetable oil
- 2 pound lean ground beef
- 1 medium onion; chopped
- 1 large green pepper; chopped
- 1 teaspoon cumin
- 16 ounces Newman's own black bean & corn salsa
- 5 8-inch flour tortilla
- 2 cup Mexican cheese blend; shredded

Preparation
Step 1
Heat oven to 350°F. Heat oil in large nonstick skillet over medium-high
heat. Add beef, onion and green pepper to skillet and cook, stirring
occasionally, for 6 minutes. Drain any accumulated fat and stir in cumin;
cook 1 minute. Stir in salsa and heat through. Remove from heat and set
aside.
Coat a 9-inch spring form pan with non stick cooking spray. Place a tortilla
in the bottom of the pan, then top with a layer of the meat mixture,
spreading evenly and leaving a one inch border around edges. Sprinkle meat
with 1/2 cup cheese and top with one tortilla, pressing down gently. Repeat
layers three more times.
Place spring form pan in oven and bake for 15 minutes. Let stand five
minutes before slicing and serving.
