Ingredients
- 12 oz tiny new potatoes
- 2 hard-boiled eggs
- 2 medium ripe tomatoes, quartered
- 8 oz green beans, steamed, sliced into 1" pieces
- 8 oz tuna
- 1/2 cup finely chopped red onions
- 1 tsp anchovy paste
- 1 T olive oil
- 2 T lemon juice
- 1 1/2 tsp Dijon
- Capers or black olives
- 3-4 basil leaves

Preparation
Step 1
1. In small bowl whisk lemon juice, olice oil, mustard and anchovy paste. Stir in olives, capers, basil and red onions
2. Line plate w/ lettuce leaves, arrange potatoes, tuna, green beans, tomatoes and eggs. Spoon dressing over. Season w/ salt and pepper.
