Ingredients

  • 2 teaspoon olive oil
  • 2 boneless chicken breasts; cut into strips
  • 2 tablespoon chili sauce
  • 1 jalapeno peppers; seeded and diced
  • 4 8 inch flour tortilla
  • 1 cup cheddar cheese; shredded
  • 4 teaspoon vegetable oil

Place olive oil in hot pan and saute chicken strips, chili sauce, and
jalapeno pepper until cooked through, about 3 - 5 minutes. Remove and
reserve. Wipe the pan clean.

Place chicken mixture on one half of each of the tortillas. Sprinkle with
cheese and fold over to form half circle. Oil cooking surface, heat, and
brown quesadillas lightly. Turn. Repeat with the other three tortillas.
Slice each into wedges and serve with salsa and black beans.
