Ingredients

  • 5 ripe avacadoes (dark skin, softly firm, no loose skin)
  • 2 fine chopped green onions
  • 1 1/2 limes
  • salt (to taste)
  • cayenne (to taste)
  • chili (to taste)
  • 1 fine chopped or pressed clove garlic
  • 1 fine chopped tomato

Preparation

Step 1

Soak garlic in juice of 1/2 of a lime (set aside for 15min)
Mash avacadoes well and add juice of 1 whole lime and rest of ingredients. Mix well, put in serving dish and cover with plastic wrap directly onto the guac. Put in fridge overnight. Pull out of fridge several hours before serving. Remove plastic just before serving.


As far as your pastry filling recommendation, I would simply exchange ground beef with ground turkey, add one fine chopped celery stick, use veg stock instead of beef or chicken and replace cinnamon and allspice with parsley, sage, rosemary and thyme. Just like the song!


If you had to go veg, you could do sauted mushrooms in a creamy tarragon reduction to replace the meat. Let your imagination go! Stick with white wine - not water, if possible.
