  • 3 quarts half and half
  • 2 1/2 cups sugar
  • 5 eggs
  • 1 cup heavy whipping cream
  • 6 tsp. vanilla
  • 3-4 bags of ice
  • rock salt

Preparation

Step 1

Gently heat 1 quart half and half with sugar until completely dissolved. Beat eggs well. Place all ingredients in 6 quart ice cream maker. Keep cold until ready to process. To process: Assemble ice cream maker and start turning. Add ice to about 1/3 full then layer rock salt, repeat until completely full. Continue to add ice throughout the processing to keep it packed. Unplug maker when motor stops or becomes very labored sounding. Pack with ice until ready to serve.

If you want to add fruit, heat the half and half with sugar. In a separate bowl mix thawed and pureed fruit and enough sugar to make sweet to the taste. Put the fruit mixture, the half and half and sugar mixture, eggs, whipping cream and vanilla in 6 quart container. Add enough half and half to bring the mixture to the fill line. Process.
