Ingredients

  • 2 cups finely chopped apples
  • 1/4 cup water
  • 1 1/2 cups butter, softened
  • 2 cups sugar
  • 2 eggs
  • 4 cups flour
  • 4 tea. baking soda
  • 2 tea. cinnamon
  • 2 tea. nutmeg
  • 1 tea. salt
  • 1 tea. cloves
  • 1 cup raisins
  • 1 cup chopped pecans
  • 1/2 cup flour
  • HARD SAUCE
  • 1/2 cup butter, softened
  • 1 cup confectioners sugar
  • 1 Tbsp. brandy

Step 1

Heat oven to 325 degrees.

In a 3 qt. saucepan combine apples and water. Cook, uncovered, over medium heat, stirring occasionally, until apples are crisply tender (7-9 minutes). Remove from heat. Stir in butter until melted. Stir in sugar and eggs until well blended.

In bowl, combine flour, baking soda, cinnamon, nutmeg, salt and cloves. Stir into apple mixture. In same bowl toss raisins and pecans with 1/2 cup flour until coated. Stir into batter until well mixed. Spoon into 10" greased Bundt pan. Bake for 65-75 minutes until toothpick comes out clean.

Cool in pan 15 minutes.

Meanwhile, in a 1 1/2 qt. mixer bowl combine all hard sauce ingredients. Beat at medium speed until light and fluffy (3-5 minutes). Invert cake onto serving plate. Serve slice of warm cake with a dollop of 1 tablespoon hard sauce on each slice.
