Ingredients
- 2 c. flour
- 2 c. sugar
- 2 tsp. cinnamon
- 1 tsp. salt
- 1 tsp. soda
- 1/2 c. finely chopped pecans
- mix dry ingredients together in large bowl. set aside.
- combine...
- 3 c. finely grated carrots
- 1 1/2 c. oil
- 4 slightly beaten eggs
- add this mixture to the dry ingredients. mix well. put in greased pan. (either 13x9 or 2 rounds ) bake at 300 degrees. 45 min to an hour. done when firm to touch. let cool completely before frosting.
- Cream cheese frosting...
- 8 oz. cream cheese (room temp)
- 1 lb. powdered sugar (half bag)
- 4 Tbsp butter
- 2 tsp vanilla
- mix well with mixer. spread on cooled cakes. top with 1/2 cup finely chopped pecans. extra frosting can be refrigerated, but set it out for awhile to soften up.
