Gabriel's Guacamole

At Gabriels, in Santa Fe, New Mexico, the guacamole-made tableside in a traditional Mexican molcajete (stone mortar) is seasoned according to customer preference. Here is the bae recipe. Add more garlic, jalapeno, onion,salt, lime juice and/or cilantro to your taste.

- 2 firm-ripe medium Hass avocados, pitte, peeled, and
- diced.
- 1/4 tsp each minced garlic and jalapeno, plus more to
- taste
- 1/4 c. chopped tomato
- 1 tsp finely chopped onion, plus more to taste
- Salt
- 2 tsp each fresh lime juice and finely chopped cilantro,
- plus more to taste
- Tortilla chips

Step 1
In a medium bowl or a molcajete,coarsely mash avocados, garlic, and jalapeno with a wooden spoon or pestle until avocados are creamy but still very chumky. Add tomato, onion, and salt to taste, and stir. Sprinkle iwth lime juiice and cilantro, then stir and taste once more. Add more seasonings if you like. Serve with tortilla chips.
