Ingredients
- 5 lb fully trimmed tenderloin beef
- 2 tsp peanut oil
- 1/4 tsp ground ginger
- 1/4 tsp curry powder 1 onion, finely chopped
- 1 clove garlic, minced
- 1 tbsp hot sauce
- 1 tbsp lemon juice
- 1 tbsp plum jam
- 2 tsp anchovy paste
- 1/2 tsp salt
- 2 tsp brown sugar
- 1/2 cup soy sauce
- 1/2 cup coconut milk
- 1/2 cup finely chopped peanuts

Step 1
Preheat the oven to 400F degrees.
Bake tenderloin 35-45 minutes or until a meat thermometer registers 120/rare or to desired degree of doneness.
Remove from oven and let stand 10-15 minutes before carving.
Meanwhile, in a saucepan combine remaining ingredients except for peanuts and simmer over low heat until thoroughly heated.
Spread over tenderloin and garnish with peanuts.
