Ingredients
- MAYO:
- 1/4 cup coconut oil
- 1/4 c olive oil
- 1/4 cup soy milk
- 1/4 tsp salt (to taste)
- 1 - 1 1/2 tsp lemon juice and/or apple cider vinegar
- Pinch ground mustard or 1/4 tsp prepared mustard
- CHICKEN:
- 2 chicken breasts, cooked and cubed
- slivered almonds or chopped pecans
- raisins/cranberries/cherries/currants
- 2 stalks celery, chopped
- turmeric
- cumin
- pepper

Step 1
Mayo - Combine all ingredients except lemon juice (or vinegar) in the food processor or blender, blending until smooth. Slowly add the lemon juice or vinegar until the mixture thickens and tastes as desired. Add salt and mustard to taste.
Mix remainder. May substitute prepared mayo or Vegannaise plus some lemon juice and/or apple cider vinegar for the homemade mayo.
