Ingredients

  • 3 tablespoons butter
  • 1 cup all-purpose flour
  • 1-1/2 teaspoons baking powder
  • 1/2 teaspoons salt
  • 1/2 cup whipping cream (heavy cream)
  • 1-2 tablespoons milk

Step 1

Preheat oven to 425 degrees. In a small skillet or pan, melt the butter over low heat and set aside.

Combine flour, baking powder, and salt in a medium bowl. Stir in cream with a fork. The mixture will be crumbly. Add milk, drop by drop, until dough just clings together.

Turn dough out onto a LIGHTLY floured surface and knead 8-10 times to smooth it into a cohesive ball.
Roll or press dough out with fingertips until it is a scant 1/2" thick.

Cut dough into 2" round with a biscuit cutter (Be sure and cut straight down without twisting, which toughens dough!) Dip tops of biscuits in melted butter and place on ungreased cookie sheet.

Bake for 12-15 minutes or until biscuits are golden.
Remove baking sheet from oven and place on a wire rack to cool slightly. Transfer biscuits to a napkin-lined basket.

Makes about 1 dozen biscuits.

HONEY BUTTER:
Whip 3 tablespoons of honey into 1 stick of softened butter until light and fluffy.
