Ingredients
- 1 1-1/4 - 1-1/2 poun rack of lamb; 7-8 ribs
- kosher salt
- freshly ground black pepper
Preparation
Step 1
Position a rack in the center of the oven and heat the oven to 425°F. Spray
a small roasting pan or rimmed baking sheet.
Arrange the lamb bone side down in the pan. Season with salt and pepper.
Roast until an instant-read thermometer inserted close to but not touching
the bones reads 125°F for rare or 130°F for medium rare, about 20 minutes
for rare and 25 minutes for medium rare.
Let the lamb rest for about five minutes. Cut between the bones to carve
the racks into chops
