Ingredients

  • 2 1/2 cups all-purpose flour(or 1 1/4 cups all-purpose and 1 1/4 cups whole-wheat flour)
  • 1 cup whole bran cereal
  • 1 cup raisin bran
  • 1/2 cup wheat germ
  • 2 teaspoons baking soda
  • 1/2 teaspoon salt
  • 1/2 cup sugar
  • 2 eggs
  • 3/4 cup unsweetened applesauce
  • 1/4 cup molasses
  • 2 cups buttermilk (I use powdered buttermilk, which comes in a pouch)

Preparation

Step 1

Mix flour, cereals, wheat germ, soda, salt and sugar. Set aside. Beat eggs, molasses and applesauce together. Add with buttermilk to dry ingredients, stirring until all are moistened.

Bake in greased muffin tins in preheated 375 F oven for about 20 minutes. Batter can be kept in the refrigerator; stir and use as much as wanted.
