  • 3 1/4-3 1/2 cups bread flour
  • 2 tsp salt
  • 2 Tbsp olive oil
  • 1-1/3 cups water
  • 2 tsp yeast

Step 1

Make dough on DOUGH CYCLE. When done, gently deflate dough, cover and let rest 10-15 minutes.


Shape (on parchment paper) into a large round ball,
or a football-shaped loaf, or a long, thin Baguette, or
4 sandwich-size baguettes, or round dinner rolls or place in floured brotform basket to rise.


Make a slit or slits in the top, if desired. Cover and let rise for 30-45 minutes - until doubled. Bake at 375 degrees for 40-45 minutes, spritzing oven with water, if desired, for a crisp crust. (Bake smaller rolls for 15-20 minutes.)


Brush with a beaten egg yolk or some melted butter during the last ten minutes of baking for a shiny or golden crust. Let cool on wire rack.
