Ingredients

  • 4 skinless, boneless chicken breast halves
  • 1 egg white
  • 1/2 of a 10-oz. pkg. frozen chopped spinach, thawed and well drained
  • 1 cup shredded mozzarella cheese
  • 1/3 cup cream-style cottage cheese, drained
  • 1 1/4 cups spaghettti sauce with garlic and herbs
  • 2 T. tomato paste
  • 6 oz. spaghetti, cooked and drained

Step 1

Preheat oven to 375 degrees. Place each chicken breast half between 2 pieces of plastic wrap. Using flat side of meat mallet, pound chicken lightly until about 1/4" thick. Set aside.
In small bowl combine egg white, spinach, half of the mozzarella cheese, and the cottage cheese. Spoon spinach mixture over chicken, leaving 1/2" border around edges. Starting from short ends, roll up chicken.
Place chicken rolls, seam sides down, in ungreased 2 qt. rectangular baking dish. In another small bowl combine spaghetti sauce and tomato paste; spoon over chicken.
Bake, covered, for 25 minutes. Sprinkle with remaining mozzarella cheese. Bake, uncovered, about 25 minutes more until chicken is no longer pink and cheese is lightly browned. Let stand 10 minutes. Serve with spaghetti.
