Preparation

Step 1

Chop the water chestnuts and scallions into small pieces.
Mix with the ground pork.
Add 1 teaspoon ground ginger and 1 Tablespoon soy sauce and stir till well blended.
Brush the edges of a won ton wrapper with water and fill with a half teaspoon of the pork mixture.
Fold over and seal edges well.
Repeat until you've used all the wrappers or pork mixture, whichever comes first. (both freeze well, so seal up whatever is left over and put in the freezer until next time)
The pot stickers can be steamed, boiled or fried.
To boil, just drop a few in a Dutch oven filled with boiling water. Cook 3-4 minutes; drain and let cool on a plate.
To steam: spray steamer basket with non stick cooking spray and steam a few at a time until done. Cool
To fry, use sesame oil in a hot skillet and cook a few minutes on each side until wrappers are brown. Drain.
When cooling, they can stick to each other, so it is best to cool them not touching each other.
Serve with a dipping sauce of 1/2 cup soy sauce, a couple of drops of hot oil and 1/2 teaspoon of ground ginger.
