Ingredients
- 1/2 pound Butter
- 2 cup onion; chopped
- 1-1/2 cups carrot; chopped
- 2 pound chestnuts
- 4 qt chicken broth
- 1 qt Milk or cream at room temperature
- 1/2 cup flour
- 1/4 teaspoon white pepper
- 1 tablespoon sale (omit if broth is salted)

Preparation
Step 1
Melt butter in 8 quart pot. Saute onions, add carrots, broth, chestnuts,
pepper, and salt. Simmer 30 minutes. Cool slightly and puree in blender.
Dissolve flour in milk/cream using whisk. Blend into soup and cook until
thick.
