Summer Pesto Salad For Your Bumper Crop Tomatoes

Ingredients

  • 1 cup whole leaf basil
  • 1/2 cup olive oil
  • salt, to taste
  • freshly ground black pepper, to taste
  • 6 cups Bibb lettuce
  • 1/4 cup chopped fresh basil
  • 2 chopped scallions
  • 2 sliced heirloom tomatoes
  • pine nuts

Preparation

Step 1

Puree basil with olive oil in a food processor. Season with salt and pepper. Toss with Bibb lettuce, chopped basil, scallions, and heirloom tomatoes. Top with pine nuts.
