Ingredients

  • 3 3 3 lbs chicken, cut up in pieces (5-6 BS thighs)
  • 1 1 1 large onion, thinly sliced
  • 2 2 1 cans 2 (6 ounce) cans tomato paste (1 can + 1 can petite diced)
  • 6 6 6 ounces sliced mushrooms (quartered)
  • 1 1 1 green bell pepper, finely chopped (red, coarse chop)
  • 2-4 2-4 2-4 garlic cloves, minced (lots)
  • 2 2 2 teaspoons oregano (or Italian seasoning)
  • 1 1 1 teaspoon dried basil
  • 1 1 1 ⁄2 teaspoon celery powder (celery salt)
  • 1 1 1 teaspoon salt
  • 1 1⁄2 1⁄2 cup dry white wine (or some Kalamata juice)
  • 3 3 3 tablespoons olive oil - drizzle over top
  • 1 1 1 teaspoon crushed red pepper flakes (optional - omitted))

Preparation

Step 1

Place onions in bottom of crock pot.

Add seasoned (fajita) chicken pieces.

Stir all the other ingredients together. (layer veggies and mushrooms, cover with tomatoes)

Pour over chicken. Drizzle with olive oil.

Cook on low heat 7 to 9 hours or high heat for about 3 to 4 hours.

Serve over pasta or rice.
