Cauliflower with Tahini Sauce

Roasting cauliflower in a very hot oven gives it an appealing crisp-tender texture and toasty flavor that pairs perfectly with the tart tahini dipping sauce in this dish.

Ingredients
- 1/4 cup extra-virgin olive oil
- 4 tsp. ground cumin
- 2 heads cauliflower, cored and cut into 1 1/2'' florets
- Kosher salt and freshly ground black pepper, to taste
- 1/2 cup tahini
- 3 cloves garlic, smashed and minced into a paste
- Juice of 1 lemon

Preparation
Step 1
1. Heat oven to 500°. Toss together oil, cumin, cauliflower, and salt and pepper in a large bowl. Transfer to 2 rimmed baking sheets; spread out evenly. Bake, rotating pans from top to bottom and front to back, until cauliflower is browned and tender, 25—30 minutes.
2. Meanwhile, combine tahini, garlic, lemon juice, and 1/2 cup water in a small bowl and season with salt. Serve cauliflower hot or at room temperature with tahini sauce.

Not good. Bitter tahini sauce and a bland roasted vegetable. But man, does that photo look good!

I'm going to have to try this one. Cauliflower is amazing roasted. More flavorful than you'd ever expect and it's the only way we eat it in our house. I'd be tempted to add some of the tahini to the mixture the cauliflower is coated in before putting it in the oven to roast. There's a dish similar to this we get a local mediterranean restaurant that adds pine nuts and sumac to a tahini based sauce and heats it and pours it over roasted cauliflower and caramelized onions. It's drool worthy.
Tasty and simple recipe! I will definitely make this again. Next time I will incorporate more vegetables. Why limit it to cauliflower?
Excellent! Delicious! I've made this several times and it's always a success! My favorite way to eat it is to load up a pita w/the cauliflower and drizzle the sauce into it - pure heaven.
