  • 1 cup rice
  • 5 cups milk
  • 1/2 to 3/4 cup sugar
  • 1 piece orange rind
  • 1 cinnamon stick
  • pinch of salt
  • 1 tablespoon margarine

Preparation

Step 1

In a medium sized pan bring the milk to a boil. Drizzle the rice in slowly so that the milk continues to boil. Add sugar, cinnamon, salt, rind and butter. Stir occasionally. Boil uncovered for about 5 minutes. Cover the pan and slowly simmer for 40 minutes. Remove the rind and cinnamon stick and pour the mixture into a 2 quart bowl or individual dishes.
Chill.
