Leeks with Bacon and Mushrooms

March 1 is St. David’s Day in Wales, a day to celebrate with traditional St David recipes. I is a day to honour the patron saint of wales, a Celtic monk who spread the work of Christianity across the country in the sixth century. On this day, people either wear a daffodil or a leek, two national emblems of Wales. The leek is associated with St. David as it is deemed healthy and virtuous with healing powers. It also acquired mystic virtues with claims that girls who slept with a leek under their pillow on St. David’s Day would see their future husband in their dreams.

Ingredients

  • 3 tablespoons butter
  • 4 rashers smoked streaky bacon, chopped
  • few thyme sprigs
  • 1 3/4 cup mushrooms
  • 2 leeks, thickly sliced

Preparation

Step 1

Melt the butter in a large frying pan, then add the bacon and fry for a few minutes until golden. Add the thyme, mushrooms and leeks with seasoning (remember bacon can be salty), cover pan and cook on a low heat for 20-25 minutes until leeks are tender.
