Ingredients
- 1 tblsp butter
- 1/2 cup chopped onion
- can chicken broth
- 1 cup Arborio rice
- 1 carrot, peeled and finely chopped
- 1/2 cup frozen peas
- 1/3 cup water
- 1/2 cup grated parmesan cheese
- 1 garlic clove, minced
- 1/4 tsp pepper
- 1 tsp dried basil

Step 1
Melt butter in 1 qt. size microwave dish. Stir in onion, cover and microwave for 1 min. Stir broth and rice into onion mixture; cover. Microwave on high 6 minutes. Stir in carrot; cover and microwave 4 minutes on high.Stir in peas, 1/2 cup water and basil. Cover and microwave 4 minutes on high. Stir, cover and microwave on high 2 more minutes. Stir in parmesan cheese, garlic and pepper. Cover and set aside for 6-8 minutes, stirring occasionally.
