Okay folks, here it is, the best ever cheesecake recipe. I have been making this recipe for over 30 years and I've tried every variation known to mankind and it still is the best cheesecake in the world. The secret here is I don't use fresh rind or zest, not when I'm adding other ingredients to make it a great cheesecake. If you want a plain cheesecake, then by all means, use fresh lemon and orange zest, it will give this recipe a fresh taste.

Ingredients

  • 5- 8 oz packages soft cream cheese
  • 1 3/4 cups sugar
  • 1/4 teaspoon vanilla
  • 1/4 teaspoon dried orange rind
  • 1/2 teaspoon dried lemon rind
  • 3 tablespoons flour
  • 5 large eggs
  • 2 egg yolks
  • 1/4 cup cream

Preparation

Step 1

Preheat oven 350*
Prepared 9" springform pan with desired cookie crust.

In a bowl, combine flour, sugar, orange rind, lemon rind, and vanilla.

In a mixing bowl beat cream cheese until fluffy, then add sugar mixture and blend well, then add eggs, one at a time beating after each addition. Stir in heavy cream.

Pour into prepared springform pan and bake for about 1 hour or until golden. Shake pan back and forth to see a soft jiggle from the cheesecake. Cool completely and refrigerate for at least 4 hours before garnishing with whipped cream. Keep refrigerated until 1 hour before serving.

Cheesecake served at room temperature is best.
