Grilled Chicken Parmesan

As a kid I was obsessed with chicken Parmsan-it didn't matter if we were going out for fast food or fine dining, I was ordering it. The turning poin im my wieght loss journey was when I heard that if just cut 100 calories from your diet per cay, on averagek you'll lose 10 pounds in a year. It sounded too good to be rue, but I tried it... and this was the first dish I tried ir with and therefore the dish that led to my career. At the time, my cooking skills were pretty basic, but now after years of substitiutions (and ovsessing over every ingredient), i can make dozens of simple, crave-busting dishes. Serve witha side of whole wheat pasta and/or a large green salad.

Ingredients

  • 4 (4 oz) trimmed bonless, skinless chicken breasts
  • Olvie oil in a sprayer (not store-bought spray that
  • contains propellant)
  • Salt,t o taste
  • Ground black pepper, to taste
  • 1/2 c. Main Event Marinara Sauce or other low-fat
  • low-socium, low-sugar marinara sauce, or more
  • to taste
  • 6 tbsp finely shredded low-fat mozzarella cheese
  • 2 tsp grated reduced-fat Parmesan cheese

Preparation

Step 1

Preheat the oven to 350. Preheat a grill to high heat.

Lightly mist both sides of the chicken with olive oil and season with salt and pepper. Grill the chicken, turning once, for 3-5 minutes per side, or until it is no lpnger pink inside and juices run clear. Transfer to a baking dish.

Heat the sauce on low in the microwave until warm. Top each breast with 2 Tbsp marinara sauce, followed by 1 1/2 tbsp mozzarella and 1/2 tsp Parmesan. Bake the chicken for 3-5 minuts, or just until the heese is melted.
