Ingredients

  • (4-5 servings)
  • 2 green onions
  • 2 cups chopped chicken meat(boiled)
  • 1 and 1/2 cup shereded mozarella or parmesan cheese
  • 1 jalapeño chile
  • 3/4 taza salsa verde
  • finely chopped
  • 1/4 fresh cilantro leaves chopped
  • 5 or 6 burrito flour tortillas
  • 1/2 cup reduce fat sour cream(optative
  • 1 cup mashed avocado with chopped tomatoes
  • (I made mine with plain yogurt or greek with some fat free cream and a pinch of salt)(keep at fridge)

Preparation

Step 1



1. Preheat oven at 180° C (medium heat)


Thinly slice green onions and reserve 2 tablespoons dark green tops for garnish.

Evenly dive chicken, chees,jalapeño,cilantro and remaining green onion on one side of each tortilla;fold other half over.

In single layer on foil lined toaster oven tray toast quesadillas 8 to 10 minutes or until tortillas are golden brown and cheese is melted.
Cut each quesadilla in half.Serve with salsa verde,plus sour cream or mashed avocado.
