Ingredients
- 1 large onion, chopped
- 3 ribs of celery, chopped
- 2-3 cloves of garlic, minced
- 1/2 head of cabbage, chopped
- 4 carrots, sliced
- 1 pound potatoes, diced
- 1/3 cup pearled barley
- 1 bay leaf
- 1 tsp thyme
- 1/2 tsp rosemary, crushed
- 1/2 tsp ground black pepper
- 7 cups low-sodium vegetable broth
- 2 cans Great Northern beans, drained
- 1 can (14 1/2 ounce) diced tomatoes
- 1 tbsp chopped parsley

Step 1
*Place vegetable, seasoning and barley into a large (5-6 quart) slow cooker. Add enough broth to just cover the vegetables. Cover and cook on low heat for 7 hours.
*Add beans, tomatoes, parsley, and salt to taste (optional). Check seasoning and add more herbs if necessary. Cover and cook another hour.
