- 1/2 pound whole wheat penne
- 1 (16-ounce) bag frozen shelled uncooked medium-large shrimp
- 2 teaspoons olive oil
- 1 onion, diced
- 2 garlic cloves, chopped
- 2 Tablespoons tomato paste
- Pinch red pepper flakes
- 1 (14 1/2-ounce) can petite-diced tomatoes
- 1/4 cup sliced fresh mint

Step 1
1. Bring large pot of water to boil. Add pasta and cook according to package directions, omitting salt if desired. Drain pasta.
2. Meanwhile, thaw shrimp according to package directions.
3. Heat oil in large nonstick skillet over medium heat. Add onion and cook, stirring, until tender, 6 minutes. Add garlic, tomato paste and red pepper flakes; cook, stirring, 2 minutes. Add shrimp and tomatoes; bring to a boil. Reduce heat and cook, stirring, until shrimp are just opaque in center, 5 minutes. Stir in pasta and mint.
