Salad Herring in shuba (Russian)

Herring in brine need to be deboned
Pickled herring needs soaking in cold water for at least 4 hours
Finished result should look like a cake

Ingredients
- 4 medium carrots, peeled
- 3 medium, well washed beets
- 3 medium potatoes, peeled
- 1 small red onion finely chopped
- 4 hard boiled eggs
- 1 1/2 c mayonnaise
- 600 ml herring filets in brine or pickled herring
- fresh dill and parsley

Preparation
Step 1
Boil carrots,beets and potatoes until tender
Hard boil eggs
cut herring in very small pieces and set aside
Grate potatoes, carrots and beets
Layer 1/2 of potatoes, mayonnaise, carrots, mayonnaise and beets and onion
Spread the herring and cover with more layers.
Lay a layer of 3 hard boiled eggs, sliced, between last layer of mayonnaise, before beets.
Cover the whole thing with last egg and parsley and dill.
