Ingredients

  • 1 (8 lb.) fully cooked ham half
  • 2 cups orange juice
  • 2 cups ginger ale
  • whole cloves
  • 1/3 cup firmly packed brown sugar
  • 1/3 cup orange marmalade
  • 2 tablespoons honey mustard
  • 1 teaspoon ground ginger

Step 1

Place ham in a large zip-top heavy-duty plastic bag. Pour orange juice and ginger ale over ham. Seal bag securely. Place ham in a large bowl; marinate in refrigerator 8 hours, turning occasionally.

Remove ham from marinade, reserving marinade. Slice away skin from ham. Score fat on ham in a diamond design and stud with cloves. Place ham, fat side up, on a rack in a shallow roasting pan; pour reserved marinade over ham. Insert meat thermometer, making sure it does not touch fat or bone. Cover and bake at 325 degrees for 2 to 2 1/2 hours, basting frequently with marinade.

Combine brown sugar, marmalade, honey mustard and ginger in a small bowl; stir well. Coat exposed portion of ham with brown sugar mixture. Bake, uncovered, an additional 30 minutes or until thermometer registers 140 degrees. Transfer ham to serving platter.
