Cajun Halibut with Praline Sauce

Ingredients
- Sauce:
- 1/2 C chopped pecans
- 1 C sugar
- 1/2 C water
- salt
- 1 T unsalted butter
- 1 T dark rum or apple juice
- Fish spice, combine:
- 2 T olive oil
- 1 T paprika
- 2 tsp dried thyme
- 2 tsp garlic powder
- 1 tsp salt
- 1 tsp pepper
- 4 , 6oz halibut pieces

Preparation
Step 1
Preheat grill to medium-high.
Toast nuts in skillet. Set aside. Simmer sugar and water until reduced by 1/2. Stir in nuts and salt, cook 2 minutes; remove from heat; whisk in butter and rum.
Bursh fish on both sides with spices. Grill, covered, approx. 3 minutes per side.
Drizzle with warm sauce and serve.
