Mary's Meatloaf

Ingredients

• 1 pound of ground beef
• 1 medium onion chopped
• 1 medium green pepper chopped
• 1 can (4 oz.) mushrooms
• 1 egg
• 3-4 handful of corn flakes
• 1 can (14.5 oz.) tomatoes (sliced open)
• Salt and Pepper
• 3-4 potatoes sliced
• 1 cup of baby carrots

Preparation

Step 1

Sauté onion, green pepper and mushrooms until cooked

Mix onion, green pepper, mushroom, egg, corn flakes, salt, pepper and meat together.

Par boil potatoes and carrots

Place meat in baking pan add carrots and potatoes to the sides - add Tomatoes to top of meat loaf and add salt and pepper

Bake at preheated oven at 350 for 1 hour
