Zucchini and Olive Flat Bread

Ingredients
- All purpose flour for dusting
- 1 pound pizza dough
- 1 T extra virgin olive oil (+ extra for drizzles)
- 1 large (8 ox zucchini, trimmed and cut into 1/8 inch slices
- 2 T's chopped fresh oregano leaves (divided)
- 1 1/2 Cups (4 oz) shredded mozzarella
- 1 cup (2.5 oz) grated Pecorino Romano
- 1/2 cup pitted sliced black olives

Step 1
Place oven rack in lower 1/3 of oven and preheat to 450 F
Roll out dough into a 112 inch circle. Brush 1 T of the oil over the dough. Prick the dough all over with a fork.
Arrange zucchini slices in a single layer on top of the dough. Drizzle the zucchini with oil.
Bake dough for 18-20 minutes until the edges begin to brown.
Remove dough from oven and sprinkle with 1 T of the oregano, the cheeses and the olives.
Bake for another 5-7 minutes until the cheeses are melted and bubbly.
Remove and sprinkle with the remaining oregano and cut into wedges to serve.
