Joe's Broiled Tomatoes

Use Joe's Garlic Creamed Spinach recipe for this recipe. One batch of spinach yields about 3-1/2 cups.

Ingredients

• 1 beefsteak tomato
• 1/2 C garlic creamed spinach
• 2 T melted butter
• 2 T seasoned breadcrumbs
• Sharp yellow or Vermont white cheddar cheese

Preparation

Step 1

Slice the tomato into 1/2" slices.
Combine spinach, butter, and breadcrumbs.
Divide on top of the tomato.
Dice the cheese and add to top.
Broil 2-3 minutes
