Apple & Cheddar Salad with Maple dressing

Ingredients
- Candied Walnuts:
- 2 Tbsp Apple Cider Vinegar
- 2 Tbsp Maple Syrup
- 1/2 Tsp Salt
- 1/2 Tsp Dijon Mustard
- 1/3 cup vegetable oil
- 1/2 cup halved walnuts (I did a mix of walnuts & pecans)
- 2 Tbsp Maple syrup
- 8 cups mixed greens
- 2 Apples, halved & sliced
- 4 oz sharp white cheddar cheese, shaved (I used 2 yr old and shaved it from the block with a potato peeler).
- Place greens in bowl & toss only as much dressing as needed to coat. Refrigerate the rest.
- Garnish with Apple, cheese & nuts.
- (Blueberries or strawberries are good as well as apple, or instead of;
- I have also used Saskatoon berries)

Preparation
Step 1
1. Mix first 4 ingredients (cider vinegar etc) & slowly whisk in oil. Taste adjust seasoning if needed.
2. To make the candied nuts, bake on cookie sheet in a 325 oven for 15-20 minutes.
3. Place greens in bowl & toss only as much dressing as needed to coat. Refrigerate the rest.
4. Garnish with Apple, cheese & nuts.
5. Blueberries or strawberries are good as well as apple, or instead of;
I have also used Saskatoon berries.
