Apple & Cheddar Salad with Maple dressing 0 Picture

Ingredients

  • Candied Walnuts:
  • 2 Tbsp Apple Cider Vinegar
  • 2 Tbsp Maple Syrup
  • 1/2 Tsp Salt
  • 1/2 Tsp Dijon Mustard
  • 1/3 cup vegetable oil
  • 1/2 cup halved walnuts (I did a mix of walnuts & pecans)
  • 2 Tbsp Maple syrup
  • 8 cups mixed greens
  • 2 Apples, halved & sliced
  • 4 oz sharp white cheddar cheese, shaved (I used 2 yr old and shaved it from the block with a potato peeler).
  • Place greens in bowl & toss only as much dressing as needed to coat. Refrigerate the rest.
  • Garnish with Apple, cheese & nuts.
  • (Blueberries or strawberries are good as well as apple, or instead of;
  • I have also used Saskatoon berries)

Preparation

Step 1

1. Mix first 4 ingredients (cider vinegar etc) & slowly whisk in oil. Taste adjust seasoning if needed.
2. To make the candied nuts, bake on cookie sheet in a 325 oven for 15-20 minutes.
3. Place greens in bowl & toss only as much dressing as needed to coat. Refrigerate the rest.
4. Garnish with Apple, cheese & nuts.
5. Blueberries or strawberries are good as well as apple, or instead of;
I have also used Saskatoon berries.
