Sautéed Snow Peas with Ginger, Garlic, and Scallion

Ingredients
- 1 tablespoon vegetable oil
- 2 garlic cloves , minced
- 2 scallion whites , minced
- 2 teaspoons grated fresh ginger
- table salt
- red pepper flakes
- 1/8 teaspoon sugar
- 1 teaspoon rice vinegar
- 2 scallion greens , sliced
- 3/4 pound snow peas , tips pulled off and strings removed

Preparation
Step 1
1. Combine 1 teaspoon oil, garlic, scallion whites, and grated ginger in small bowl. Combine ¼ teaspoon salt, 1/8 teaspoon red pepper, and sugar in second small bowl.
2. Heat remaining 2 teaspoons oil in 12-inch nonstick skillet over high heat until just smoking. Add snow peas, sprinkle with salt mixture, and cook, without stirring, 30 seconds. Stir and continue to cook, without stirring, 30 seconds longer. Continue to cook, stirring constantly, until peas are crisp-tender, 1 to 2 minutes longer.
3. Push peas to sides of skillet; add scallion mixture to clearing and cook, mashing with spatula, until fragrant, about 30 seconds. Toss to combine scallion mixture with vegetables. Transfer peas to bowl and stir in rice vinegar and scallion greens. Season with salt and pepper, and serve.
Technique
No More Strings Along the seam of each pod is a fine, wiry "string" that should be removed before cooking. To pull it off, simply grasp one of the ends and pull gently along the length of the pod.
