Double Chocolate Chip Oatmeal

Both Cynthia and our test kitchen specialists agreed that Flat Belly Diet member Beth Willhite's oatmeal was our recipe contest winner. It meets the Flat Belly Diet requirements AND it's sure to satisfy any chocolate-lover's craving. Cynthia's comment: "I love this one!! I personally love black pepper in chocolate."

Tip: To make it a Flat Belly Diet! Meal, serve with 1/2 cup skim milk (45) or sprinkle with 1/2 cup raspberries (32) or cherries (49).
Contest winner Beth Willhite's note: The dark chocolate in this recipe helps tone down its chocolaty sweetness, while the black pepper deepens and intensifies the chocolate flavor. I find this satisfies a morning chocolate attack!

- 3/4 c liquid (water)
- 1/4 c chocolate chips, divided, half semi-sweet and half dark chocolate chips (207) MUFA!
- 1/4 tsp vanilla (3)
- 1/8 tsp of black pepper (0)

Preparation
Step 1
Directions:
In a saucepan over high heat, bring the water to a boil. Add the oats, stir once to moisten all oats, then cook, stirring occasionally until water is absorbed (about 3 to 4 minutes). Remove pan from heat, and add 2 Tablespoons semi-sweet chips, vanilla, pepper and salt. Stir to thoroughly mix melted chocolate chips and seasonings with oatmeal. Spoon mixture into bowl. Sprinkle remaining 2 Tablespoons dark chocolate chips over top while still warm.
