Ingredients
- 2/3 c. chopped fresh cilantro
- 1/4 c. plain yogurt
- 1/4 c. red wine vinegar
- 1/4 c. Parmesan
- 1/4 c. chopped shallots
- 2 anchovy fillets
- 2 garlic cloves
- 1 jalapeno, seeded and chopped
- 1 T. lemon juice
- 3/4 c. olive oil
- 8 c. romaine
- 3 c. salad croutons
- 1 red bell pepper
- 1 c. corn

Preparation
Step 1
Puree first nine ingredients until smooth. Gradually add olive oil. Season to taste. Can be prepared 1 day ahead.
Toss with remaining lettuce, etc.
