Ingredients
- 1 medium head Cabbage
- 7 Bacon slices
- 2 Eggs
- 1 Tsp. Salt
- 2 Tblsp. Sugar
- 1/3 cup Vinegar
- 1/3 cup Water
- 3 Tblsp. Bacon Fat
- 1/3 cup Heavy Cream

Step 1
Shred cabbage; wrap in fole and refrigerate.
Cook bacon until crisp, drain and save the bacon fat. Crumble bacon and set aside.
In double-boiler top, beat eggs, salt, vinegar and water utnil blended. Place over hot, not boiling water. Add bacon fat, while stirring constantly with whisk until mixture thickens. Coll until lukewarm; stir in cream; refrigerate.
Meanwhile, toss shredded cabbage with bacon, reserving a few bits as garnish. Stir up dressing; pour over cabbage; toss; sprinkle with remaining bacon; Serve at once.
