Oven Pot Roast with Vegetables

My family loves pot roast. Though I usually use my dutch-oven I find it is too small to cook enough vegetables to feed my large family. So I came up with a way to use my roasting pan to keep it simple.The long cooking time left the roast fork tender. Just be sure to cut against the grain of the meat and not with it.

Ingredients

  • 3 lb chuck roast
  • 4 potatoes, quartered
  • 1/2 lb carrots
  • 1 envelope Lipton Onion Soup Mix

Preparation

Step 1

Place chuck roast on large piece of foil.
Add potatoes and sliced carrots.
Top with 1 envelope Lipton Onion Soup Mix.
Wrap and seal tightly.
Place in roasting pan.
Bake at 350 degrees for 1 1/2 hours or until

MY NOTES: Use homemade equivalent of a packet of Lipton Onion Soup Mix. Much less salty!
