Ingredients

  • 2 lbs boneless, skinless chicken breast
  • 1 small onion
  • 5 corn tortillas, chopped into small strips
  • 2 cloves garlic, minced
  • 1 15oz can diced tomatoes
  • 1 package taco seasoning
  • 6 cups chicken stock
  • 2 tbsp Tabasco
  • 1 cup Jack cheese
  • 2 large avocados, sliced

Preparation

Step 1

In a large pot of water, boil the chicken breast until done. Shred the chicken when cooled.

In another large pot, cook the onions until tender. Add the tortilla strips halfway through the onion cook time. Add the garlic and cook 1 minute longer. Add the tomatoes, with juice. Stir in the taco seasoning mix and simmer for 5 minutes.

Add the shredded chicken and toss to coat. Add the chicken stock and Tabasco then bring to a boil. Reduce heat to low and simmer for 10 minutes.

To serve, put some Jack cheese in the bottom of a bowl. Add a slice of avocado. Top with the soup. Enjoy!
