Fried Chicken Strips

I recently made this recipe of Mom's for my in-laws and they told me it was the "best fried chicken ever." Slicing the chicken breasts into strips cuts down on cooking time and ensures every piece is crunchy and evenly coated.

Ingredients
- 2-2/3 cups crushed saltines (80 crackers)
- 1 teaspoon garlic salt
- 1/2 teaspoon dried basil
- 1/2 teaspoon paprika
- 1/8 teaspoon pepper
- 1 egg
- 1 cup milk
- 1-1/2 lbs boneless skinless chicken breasts
- Oil for frying

Step 1
1. Cut chicken breasts into half-inch wide strips for frying.
2. In a shallow bowl, combine the first five ingredients. In another shallow bowl, beat egg and milk. Dip chicken into egg mixture, then cracker mixture.
3. In an electric skillet or deep-fat fryer, heat oil to 375°. Fry chicken, a few strips at a time, for 2-3 minutes on each side or until golden brown. Drain on paper towels. Yield: 6 servings.

This was very good. I used 1/2 cracker crumbs and 1/2 whole wheat flour in place of the saltines. I also pan fried the chicken pieces in about 1 Tbsp of oil until they were just cooked through and then finished them off for 5 minutes in a 375 degree oven while I made cream gravy with the drippings in the pan. Much healthier than deep-frying and still very tasty!
I made this tonight and it was wonderful. I bought a bag of those frozen strips and cut them into smaller strips. Kids and adults loved them alike!
These were really good!! Can't get over the crispness of the coating, and the wonderful flavor from the seasonings.
I prepared these for my husband and a foster daughter (who doesn't like to eat meat), however, you wouldn't have guessed that about her if you had seen her scarfing these chicken strips down! They were awesome and we ate them without any dip of any kind.
This was awesome! My husband, two toddlers and I loved this chicken recipe. My husband just bought me a new deep fryer and this was the first recipe I made. Thank you!
