Cookies - Oatmeal Almond Thins - GF 0 Picture

Ingredients

  • 1 stick (8 tablespoons) butter 1-7 oz box Odense Almond Paste 1 cup quick cooking oats* 3/4 cup light brown sugar, firmly packed 1/2 teaspoon salt 1 large egg
  • *Whole rolled oats may be substituted for quick cooking oats but must be finely chopped (not ground to a powder) in a food processor first.

Preparation

Step 1

1. Preheat oven to 350F. Line cookie sheets with parchment paper or greased aluminum foil.
2. Melt the butter in a pan or microwave.
3. Grate Almond Paste into a medium bowl using the large hole side of a box grater.
4. Add melted butter to Almond Paste and with an electric mixer beat to a paste-like consistency.
5. Stir in oats, brown sugar and salt. Mix until well combined.
6. Add egg and beat until well mixed.
7. Drop rounded teaspoons onto cookie sheets, leaving 3 between cookies.
8. Bake for 10 minutes or until golden with darker edges, but not browned. Carefully slide foil or parchment paper from cookie sheets onto wire racks.
9. Cool completely before removing cookies from foil or paper liner. Store in airtight containers between sheets of wax paper.
